The Vinclaire butcher’s shop opened its doors on Saturday 9 August in the pedestrianised streets of the historic town centre. A butcher, pork butcher and caterer, this young couple from the Ardèche region share their expertise and quality products.

A traditional butcher’s shop in Aubenas
Nestling at the gateway to the Cévennes mountains, Aubenas is a town with a rich heritage, a lively Saturday market and a host of gourmet restaurants. These include traditional butcher’s and pork-butcher’s shops, the true ambassadors of the Ardèche terroir. Here’s a glimpse into a world of expertise where the quality of the meat and respect for tradition form an inseparable duo.
After closing for several months, the Vinclaire butcher’s and delicatessen in the rue de Bernardy has opened, with a new couple to serve you: Corentin and Alicia. After training in Aveyron and Lanas, experience in a supermarket in Aubenas and with an artisan butcher in Saint-Cirgues-en-Montagne, Corentin decided to take over this town-centre business with his partner.

Regional specialities and products
The Vinclaire butcher’s shop focuses on meats from regional farms, guaranteeing freshness and quality. Lamb, pork, beef and poultry… each piece is carefully selected to satisfy you, with practical suggestions to enhance your recipes and cooking.
As for charcuterie, you’ll find a selection of award-winning products, from the classic to the fanciful, including traditional dry sausages, matured cured ham, forest pâtés and herb terrines, accompanied by a selection of southern wines.
Depending on the season, prepared dishes and a catering range complete the meat offer, providing a complete and varied meal every day.
There are also specialities prepared on site, including the following:
- Stuffed boneless chicken thighs
- Mandarin prawn salad
- Ardéchois curd
- Potato cakes
- Stuffed courgettes and tomatoes
- Chipolatas and merguez
- Home-made terrine
- All-meat skewers for grilling
Corentin and Alicia also offer gourmet advice to help you make the right choices, and share recipes and preparation tips. We’ll give you the advice you need, whether you’re planning a barbecue, a raclette, a festive meal or a picnic on the banks of the Ardèche.
